Karedok
Karedok or keredok
is one of the Sundanese specialties in Indonesia. Karedok made with raw
vegetable ingredients, among others; cucumber, bean sprouts, cabbage, long
beans, sweet potatoes, basil leaves and eggplant. While the sauce is a peanut
sauce made from red chili, garlic, kencur, peanuts, sour water, java sugar,
salt, and shrimp paste. Karedok is served with a sprinkling of crackers on top
of it. Karedok is usually a complementary food in the daily menu.
Karedok a healthy
dish typical of Sundanese, this food is suitable for those of you who are
running a diet program. This one food is also usually sold together with
gado-gado, this karedok has a unique taste because it is a blend of kencur and
peanut sauce that is one. Here is a recipe for making karedok:

1/4 bean sprouts

1/4 cabbage
·
1/4 basil leaves
·
1/4 long beans,
thinly sliced
·
1 cucumber, thinly
sliced
·
1/4 milled beans
·
1/4 java sugar

2 cm kencur
·
1 lime
·
2 red cayenne
pepper
·
1/2 teaspoon of
shrimp paste
·
salt to taste
The steps:
1.
Rinse all
vegetables and prepare a mortar

Rub the chili,
shrimp paste, kencur and salt until smooth, then add the ground beans and java
sugar again until smooth and give water little by little until it does not
thicken and does not melt

Add all the
vegetables to stir with chilli sauce until evenly mixed
